Light Green Salad

This is one of my favorite salads. It is simple, but tasty, and can go with a casual dinner or elegant one too. It's easy to throw together.

Ingredients:

  • Romain lettuce leaves
  • tomato
  • scallions
  • virgin olive oil
  • salt to taste

Wash the romaine lettuce leaves. Shake off excess water and blot with paper towel. Stack three or four on top of each other, then slice down the middle. Combine both stacks into a tile pile then slice thinly, about quarter of an inch. Repeat until you have desired amount cut up. Throw it all in a bowl and salt lightly.

Wash a scallion or two and slice thinly. Add to bowl.

Wash tomato and slice in small wedges (or use cherry tomatoes, whatever you have on-hand). Add to bowl then salt the tomatoes lightly.

Drizzle 1/16 of a teaspoon of olive oil on the salad. Toss, taste, then salt again very lightly if needed.

The key to this salad is the tiniest amount of olive oil. The salt brings out the flavor, and the tomatoes and scallions add the punch.

It sounds simple, but it really tastes great.
